In Cameron’s Kitchen this week, ECR’s Cameron Claassens shares his full-proof recipe which he says is “quick and easy.” So why not give a shot?
SERVES 4

1kg chicken fillets cut into strips
50ml oil
50g butter
1 onion chopped
250g mushrooms
500ml sour cream
½ tsp crushed garlic

50ml tomato puree
200ml chicken stock
2-3 spring onions chopped
Salt and pepper to taste
Heat oil and brown strips and set aside. Add butter and brown onions and mushrooms. Add the chicken stock, garlic and tomato. Return chicken to pan and simmer for 4-5min. Add spring onion and serve.
